amidst unknowns, uncertainties, frustrations, dilemmas, and homesickness. Who
knew that being an adult comes with so many responsibilities and big decisions?

in my surroundings.

in running when the air has just cooled down and the sky has turned a gorgeous
shade of blue and gray... even beauty in the painful side cramps while running which
turns your run into an enjoyable Friday evening walk.

in little kids I don't know randomly asking if I am Korean and me giving them a
lecture on looking both ways before crossing the street.
Beauty
in heart to heart talks… even if it is awkward and scary with either
undesirable or welcome changes and situation adjustments. Honesty is beautiful.
Beauty
in walking with one of my students outside the school grounds to get his angst
out and holding our arms out in the air and screaming at the top of our lungs
every 30 seconds, "SUMMER VACATION!"… can’t beat that!
Beauty
in simple dishes with fresh and in-season ingredients... roasted asparagus and
Walla Walla sweet onions with olive oil, salt, and pepper.
Beauty
in baking from scratch a delicious Alice Water’s chocolate cake with orange cream cheese dressing and sweetened strawberries for my
classroom’s graduation party… and then heartbreak when my sweet but brutally honest
students told me it was not their type of cake and proceeded to throw in the
trash decadent and beautiful pieces. To the rest of the staff who told me it was delicious... thank you. And to Costco... why have you spoiled the taste buds
of our youth? WHY???

in a nice and easy yoga class.

in a Papa Murphy's Pizza and 2 buck Chuck wine.
Sometimes,
life isn't as hard as I make it out to be... I've been through worse and some
people are living in unimaginable conditions... Who am I to complain?

has been said before but it is the truth, plain and simple:
Life is beautiful.

Yes, Alice Waters is one of my favorites in the cooking world. These pictures were taken in Spokane, Washington... North of Spokane to be more specific. :) I am glad you stopped by!
